Chinni’s Corner-Sunday Ka Chaska
One more Sunday, goes its way. I guess Examinations are almost round the corner or in a few cases it has just started. All the best to all the boys and girls, appearing for the examinations. Study well, Enjoy your studies, just like you would a game of cricket. Give off your best and leave the rest to the almighty. For the Parents it is very important to understand your child and be supportive of his/her efforts. Not everyone becomes a whiz kid in the sphere dreamt of by the parents, but a whizkid for sure in his/her chosen field. It is the parents responsibility to identify that field and encourage the child. Well this is Chinni’s pet advice to all young parents.
Well coming back to my Sunday story, all the grandparents had gathered around Chinni and were imploring her to have a go at her corner. Chinni did not even bat an eyelid before beginning to wield her ladle, the fun was just about to begin. When the famous corner begins to fire, can the cameraman be far behind. The lazy me was resisting but the temptation of a classic food shots, a few honey like words had to win the battle over lazy bones. I stepped into her world and asked her what was being planned on the plate? Two Daughters(one in law), Two grandsons, Two doting doctor grand-daughters, a ever demanding husband and yours truly, thats quite a mouthful to feed. There were quite a few fresh vegetables and it did not take a long time for Chinni to decide that it shall be a boquet of delicious dishes on a magical Sunday. I have by strategy called it Sunday ka Chaska- just to keep it a little mysterious. I am not naming the dishes as I go into interactive mood and would request my wonderful readers to name the dishes.
Dish 1
Chop Vegetables- Onion,Carrot,Potatoes,Capsicum,Tomatoes,Beans. Chinni prefers to slice them long in this case.
Cook Basmati Rice in a Pressure Cooker
In a Mixer grind the following ingredients: Onion,Tomatoes, Dhaniya Powder,Chilly Powder,Cinnamon stick, Cardamom to a fine paste like consistency:
Now add this paste to cooking oil in a frying pan
Stir well and allow to cook for some time.
Cook the chopped vegetables in a pressure cooker. Once the vegetables are cooked, add them to the cooked masala in the frying pan, stir well.
Time is now ripe to mix the cooked Basmati Rice with the cooked Vegetables.
Add Salt as desired.
Your dish is not yet ready as the accompaniments have to be now prepared.
Get finely chopped Onions,Tomatoes,Capsicum,Cucumber,Green Chilly, Coriander leaves ready.
Add Curd to this.
Add Salt to taste.
and there we go, Mix well, its ready as simple as that
Moving on to final dish, it has to do with my favorite Potatoes. Chop potatoes into slightly big pieces like this
Add Turmeric Powder to the Potatoes and cook them in a pressure cooker.
For the Masala, grind the following ingredients in a pressure cooker: Onion,Green Chilly,Dhaniya Powder, Pepper-Jeera Powder and Red chilly powder.
Grind the ingredients to a fine paste like consistency.
Now add cooking oil to a frying pan.
Add the Garam Masala Paste to the hot cooking oil.
Add a little bit of salt and sugar.
Add some turmeric powder. Meanwhile keep some chopped tomatoes ready to be made into a puree.
Add some ghee, mix all the ingredients well.
You would need to grind the chopped tomatoes in a Mixer Grinder.
Now add the Thick Puree to the already cooked Garam Masala Paste.
Mix all the ingredients well.
Mash the Cooked Potatoes well.
Add the Potatoes to the frying pan containing the Garam Masala Paste and the Tomato Puree.
Add Salt to taste.
You may want to add some Amul Butter.
Here comes the mystery ingredient that adds to the taste quotient. This is a googly from Chinni:
Milk
Mix all the ingredients well. Chaska No 3 is ready to be served with Chaska No 1 and Chaska No 2. Garnish with Coriander leaves.
