Chinnis Corner: The Magic of Her Recipes- Tomato More Kozhambu




I am back to doing a Recipe Blog after a long time. Coming to Food and Recipes my mother does have a magical hand, The food that she has cooked all these years has been nothing but mind blowing. Experience shows in the right amount of spices, salt and pepper, the cooking time, the mixing of all the ingredients and Hey Presto you have a dish that deserves much more than a Michelin Star. I will sort of deviate a little from my normal routine of just posting a recipe but experiment around, research a little. Always Helps. I strive to achieve more than perfection in all that I write. It should be perceived as useful for all those who read the blog. So here is what I would like to go about it, take a list of the main ingredients and derive the Health benefits of each of these ingredients.

Mustard Seeds: 
Mustards are rich source of health benefiting minerals. Calcium, manganese, copper, iron, selenium and zinc are some of the minerals especially concentrated in these seeds. Calcium helps build bone and teeth. Manganese used by the body as a cofactor for the antioxidant enzyme superoxide dismutaseCopper required in the production of red blood cells. Iron is essential for the red blood cell formation and cellular metabolism.

Tomatoes:
Tomatoes are also an excellent source vitamin C,biotin, molybdenum and vitamin K. They are also a very good source of copper, potassiummanganese,dietary fiber, vitamin A (in the form of beta-carotene), vitamin B6folateniacinvitamin E and phosphorus.

Curd:
Yogurt comes from milk and therefore, it is loaded with several essential nutrients like calcium, vitamin B-2, vitamin B-12, potassium, and magnesium. An advantage with yogurt is that it is light on the stomach and easier to digest than milk. 

Jeera:
Jeera helps get rid of acidity and bloating, and provides relief from indigestion. It acts as a painkiller and is especially beneficial in curing stomach ache and abdominal pain.

Curry Leaves:
Packed with carbohydrates, fiber, calcium, phosphorous, irons and vitamins like vitamin C, vitamin A, vitamin B, vitamin E, curry leaves help your heart function better, fights infections and can enliven your hair and skin with vitality.

Turmeric Powder:
Fighting inflammation.
As an antioxidant.
Protects the heart in various ways.
Helpful for arthritis.
Brain boosting.
May be helpful for fighting diabetes and cancer.

Coconut: 
Coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium,magnesium and phosphorous. Unlike cow's milk,coconut milk is lactose free so can be used as a milk substitute by those with lactose intolerance.

Ginger: 
Ginger Contains Gingerol, a Substance With Powerful Medicinal Properties. 
Ginger Can Treat Many Forms of Nausea, Especially Morning Sickness. 
Ginger May Reduce Muscle Pain and Soreness.

Let me move on to the main Recipe without keeping you waiting much more:

In a Pan Heat Cooking Oil



Add Mustard Seeds. Allow the Seeds to Splutter. Add Chopped Tomatoes





   Add Turmeric Powder
















    Stir all the ingredients well. Allow to cook for a few minutes
















    In a Blender Grind the following ingredients: Toor Dal(Soaked previously in water for 15 minutes), Coconut Pieces, Green Chilly, Ginger, Curry Leaves.
















    Empty the contents of the Blender into the Cooking Pan containing the Cooked Tomatoes
















    Stir all the ingredients well. Replace the Cooking Vessel with a lid and allow the ingredients to cook well for about five minutes.
















    After five minutes of cooking stir the ingredients once again
















    Add Salt to Taste, Stir the Mixture well once again.
















    Mix Well after the salt has been added. Add Curd.
















    One Last round of stirring 
















    And you are good to go with More Kozhambu
