Chinni's Corner: A Simple Recipe: Tomato More Kozhambu

There is so much to be written about the food we eat, the processes involved even before we consume food and that is exactly where the oomph factor comes in as far as food is concerned. The aroma, the flavors, the spices, the ingredients, the right time required for cooking all required to make a great dish. It needs to be noted that Cooking food is an art and a science at the same time. However it is a very simple process that can churn out some great dishes if methodical steps are followed. Today I would like to present to you the Humble More Kozhambu:

Step: Grind the following ingredients in a mixer grinder: Coconut, Green Chilly, Urad Dal, Chana Dal(Both Urad Dal and Chana Dal needs to be soaked in water for 15 minutes), Dhaniya, Jeera. Grind all ingredients to a paste like consistency.

In a cooking vessel , add cooking oil. Allow to heat for a few minutes.

Add Mustard Seeds.

Slice Tomatoes and Add to the cooking vessel. Add a pinch of salt.

Add Turmeric Powder

Mix all the ingredients well and allow to cook well for some time.

Add the ground paste to the cooking vessel.

Mix all the ingredients well.

Add Salt to taste.

You may now add Curd

Mix all the ingredients well. Do not allow curd to a cook for a long time as the tanginess and the flavor in the curd will be lost if cooked for a longer time, a few minutes will do.

Add Curry Leaves and Coriander Leaves to the mixture. Your Tomato More Kozhambu is ready to be served hot with steamed rice
